1 1/2 pounds lean pork
1 tablespoon cooking oil
1 teaspoon salt
1 1/2 tablespoons ground red chili
1 teaspoon oregano
1 clove garlic, peeled and mashed
3 large ripe tomatoes, peeled and diced
1 pint water
Coat pork lightly in flour.
Brown pork slowly on all sides in oil in a large heavy saucepan. While pork browns, add ground chili. Add remaining ingredients, cover, and simmer for 1 1/2 hours, or until tender, stirring occasionally.
